1 lb spicy Italian sausage (you can use chicken sausage for a lighter option)

1 cup uncooked long-grain rice (white or brown)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) diced tomatoes with green chilies (undrained)

1 medium onion, diced

1 red bell pepper, chopped

2 cloves garlic, minced

1 cup chicken or vegetable broth

2 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

1/2 tsp black pepper

Salt to taste

2 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for extra heat)

Instructions
 

Cook the Sausage: In a large skillet or pan, heat the olive oil over medium-high heat. Remove the sausage from its casing and crumble it into the skillet. Brown the sausage for about 5-7 minutes until fully cooked and no longer pink. Transfer to a plate and set aside.

    Sauté the Vegetables: In the same skillet, add the diced onion and red bell pepper. Sauté for about 3-4 minutes until the onion is translucent. Add the minced garlic and sauté for an additional 1 minute until fragrant.

      Add Spices and Rice: Stir in the chili powder, cumin, smoked paprika, black pepper, and salt to the vegetable mixture. Mix well. Add the uncooked rice and stir to coat it with the spices and vegetables.

        Combine Ingredients: Pour in the diced tomatoes with their juice and chicken broth. Stir in the black beans and the cooked sausage. Bring the mixture to a boil.

          Cook the Rice: Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 20-25 minutes (or according to rice package instructions) until the rice is tender and has absorbed most of the liquid.

            Fluff and Serve: Remove the skillet from heat and fluff the rice with a fork. Taste and adjust seasoning if necessary. Garnish with chopped cilantro and sliced jalapeños if desired.
