For the Sushi Stack:

1 cup sushi rice

1 ¼ cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

1 ripe avocado, diced

8 ounces sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Kewpie)

1 tablespoon Sriracha (adjust based on spice preference)

1 teaspoon soy sauce

1 teaspoon sesame oil

1 tablespoon green onions, finely chopped

1 tablespoon roasted sesame seeds (white or black)

For Garnishing:

Extra soy sauce for drizzling

Additional Sriracha, for extra heat

Thinly sliced nori (seaweed)

Microgreens or edible flowers (optional)

Instructions
 

Prepare the Sushi Rice:

    Start by rinsing the sushi rice under cold water until the water runs clear. This removes excess starch. Combine the rinsed rice and water in a medium saucepan and let it soak for 30 minutes. After soaking, bring it to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 20 minutes, or until the water is absorbed. Turn off the heat and let it sit covered for an additional 10 minutes.

      Season the Rice:

        In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice has rested, transfer it to a large bowl and gently fold in the vinegar mixture. Be careful not to smash the rice. Allow it to cool to room temperature.

          Prepare the Spicy Tuna Mixture:

            In another bowl, combine the diced tuna, mayonnaise, Sriracha, soy sauce, sesame oil, and chopped green onions. Mix gently until the tuna is well-coated and the ingredients are evenly distributed. Adjust seasoning to taste, adding more Sriracha for heat if desired.

              Assemble the Sushi Stack:

                Using a round mold (like a biscuit cutter or a small ring), start by placing a layer of sushi rice at the bottom, pressing it down gently. Follow this with a layer of the spicy tuna mixture, spreading it evenly. Then add a layer of diced avocado. Repeat the layers until you finish with a final layer of sushi rice.

                  Garnish:

                    Carefully remove the mold from the stack. Drizzle with extra soy sauce and Sriracha, and sprinkle with roasted sesame seeds. For an elegant touch, you can also add thinly sliced nori around the stack and garnish with microgreens or edible flowers.

                      Serve:
