4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup canned artichoke hearts, drained and finely chopped

1/2 cup cream cheese, softened

1/2 cup Greek yogurt or sour cream

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Olive oil for drizzling

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Filling: In a medium mixing bowl, combine the chopped spinach, artichoke hearts, cream cheese, Greek yogurt (or sour cream), mozzarella cheese, Parmesan cheese, minced garlic, onion powder, garlic powder, paprika, salt, and pepper. Mix until well combined.

      Prepare the Chicken: Use a sharp knife to cut a pocket into each chicken breast. Cut carefully so you don’t slice through completely; it should hold the filling.

        Stuff the Chicken: Generously stuff each pocket with the spinach and artichoke mixture, using your fingers or a spoon to help pack it in. Secure the openings with toothpicks if necessary.

          Season the Chicken: Drizzle the outside of each stuffed chicken breast with olive oil and season with additional salt, pepper, and paprika for color.

            Bake: Place the stuffed chicken breasts on a baking sheet or in a baking dish, then bake in the preheated oven for 25 to 30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).

              Rest & Serve: Remove from the oven and let the chicken rest for about 5 minutes before serving. This will help the juices redistribute. Garnish with chopped fresh parsley before serving.
