2 ribeye steaks (about 1 inch thick)

Salt and black pepper to taste

2 tablespoons olive oil

8 ounces pasta (fettuccine or tagliatelle recommended)

3 cloves garlic, minced

1 cup heavy cream

½ cup grated Parmesan cheese

1 tablespoon Dijon mustard

1 teaspoon Italian seasoning (oregano, basil, thyme)

1 cup baby spinach

Fresh parsley, chopped (for garnish)

Prepare the Steaks: Season both sides of the ribeye steaks generously with salt and black pepper. Let them sit at room temperature for about 30 minutes before cooking.

    Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve about ½ cup of pasta water, then drain and set aside.

      Sear the Steaks: In a large skillet, heat olive oil over medium-high heat. Once hot, add the steaks. Cook for about 4-5 minutes on each side for medium-rare, adjusting time for your preferred doneness. Once cooked, transfer to a plate and let rest for at least 5 minutes.

        Make the Sauce: In the same skillet, reduce heat to medium and add minced garlic. Sauté for about 1 minute until fragrant. Then, add in the heavy cream, stirring to combine.
