2 (8 oz) ribeye steaks

4 slices of sourdough bread

1 cup arugula

1 medium ripe avocado, sliced

1 medium tomato, sliced

1 small red onion, thinly sliced

4 tablespoons garlic aioli

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon smoked paprika

Optional: Slices of cheddar cheese

Marinate the Steaks: In a bowl, combine olive oil, salt, pepper, and smoked paprika. Rub the mixture onto the ribeye steaks and let them marinate for at least 30 minutes.

    Cook the Steaks: Preheat a grill or skillet over medium-high heat. Cook the steaks for about 4-5 minutes per side for medium-rare, or until they reach your desired doneness. Remove from heat and let rest for 5 minutes before slicing.

      Toast the Bread: While the steaks are resting, toast the sourdough bread slices on the grill or in a toaster until golden brown and crispy.

        Prepare the Toppings: While the bread is toasting, slice the avocado, tomato, and red onion.

          Assemble the Sandwich: Spread 1 tablespoon of garlic aioli on each slice of toasted bread. On the bottom slice, layer arugula, sliced steak (cut against the grain), tomato, onion, and avocado. If using, add slices of cheddar cheese.
