Ingredients

For the Cake:

2 cups all-purpose flour

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup unsalted butter, room temperature

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

1 cup sour cream

1 cup diced fresh strawberries

For the Swirl:

1/4 cup brown sugar

1 tsp ground cinnamon

For the Glaze:

1 cup powdered sugar

2-3 tbsp milk

1 tsp vanilla extract

Optional: Additional diced strawberries for topping

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish to prevent sticking.

Mix Dry Ingredients: In a medium bowl, mix together the flour, baking powder, baking soda, and salt. Set aside.

Cream Butter and Sugar: In a large mixing bowl, cream the room temperature butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 2-3 minutes.

Add Eggs and Vanilla: Beat in the eggs, one at a time, ensuring each is fully incorporated. Then add the vanilla extract and mix until combined.

Incorporate Sour Cream: Gradually add the sour cream to the wet mixture, mixing well until smooth.

Combine Dry with Wet: Slowly add the dry ingredient mixture to the butter-sugar mixture. Mix until just combined. Be careful not to over-mix.

Fold in Strawberries: Gently fold in the diced fresh strawberries until evenly distributed throughout the batter.

Prepare the Swirl Mixture: In a small bowl, combine the brown sugar and ground cinnamon.

Layer the Batter: Pour half of the cake batter into the prepared baking dish. Sprinkle half of the cinnamon-sugar mixture evenly over the batter.

Add the Remaining Batter: Pour the remaining cake batter on top, smoothing it out carefully. Sprinkle the remaining cinnamon-sugar mixture over the top.

Create the Swirl: Using a knife, gently swirl the batter in a figure-eight motion to create a marbled effect.

Bake the Cake: Place the baking dish in the preheated oven and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.

Prepare the Glaze: While the cake is baking, combine the powdered sugar, milk, and vanilla extract in a small bowl. Whisk until smooth, adjusting the thickness by adding more milk or powdered sugar as necessary.

Cool and Glaze: Once the cake is done, let it cool in the pan for about 10 minutes, then drizzle the glaze over the warm cake. For an extra touch, top with additional diced strawberries if desired.

Serve: Allow the cake to cool completely before serving. Enjoy a slice of this delightful Strawberry Honeybun Cake with family and friends!
