Strawberry Icebox Cake

2 cups heavy whipping cream

1 cup powdered sugar

1 teaspoon vanilla extract

2 cups fresh strawberries, hulled and sliced

1 package of honey graham crackers (about 14-15 crackers)

Extra strawberries for garnish

Prepare the Whipped Cream: In a large mixing bowl, combine heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the mixture on medium speed until soft peaks form. Be careful not to over-whip.

    Layer the Base: In a 9x13-inch baking dish, lay a single layer of honey graham crackers at the bottom. You may need to break some crackers to fit them neatly.

      Spread the Cream: Spread a generous layer of the whipped cream mixture over the graham crackers, smoothing it out evenly.

        Add Strawberries: Layer half of the sliced strawberries over the whipped cream. Spread about half of the remaining whipped cream on top of the strawberries.

          Repeat the Process: Add another layer of graham crackers on top of the whipped cream, followed by the rest of the whipped cream, and the remaining sliced strawberries. Finish off with a final layer of whipped cream.
