4 large bell peppers (red, yellow, or green)

1 cup cooked quinoa (or rice)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

2 teaspoons taco seasoning

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro for garnish

Optional toppings: sour cream, guacamole, jalapeños

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Slice each pepper into quarters lengthwise to create nacho-sized pieces.
