Stuffed Fruit Bell Peppers

4 large bell peppers (red, yellow, or orange)

1 cup cooked quinoa (or rice)

1 cup diced fresh pineapple

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1/2 cup red onion, finely chopped

1 tsp cumin

1 tsp smoked paprika

Salt and pepper to taste

1/2 cup shredded cheese (optional, consider Monterey Jack or cheddar)

Fresh cilantro or parsley for garnish

Lime wedges for serving

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish. If they don’t stand up well, you can carefully trim the bottoms to create a flat surface without cutting through.

      Mix Filling: In a large mixing bowl, combine the cooked quinoa, diced pineapple, black beans, corn, red onion, cumin, smoked paprika, salt, and pepper. Mix until all ingredients are well incorporated.

        Stuff Peppers: Spoon the filling mixture into each bell pepper, packing it gently to fit as much as possible. If using cheese, sprinkle some on top of the filling in each pepper.

          Bake: Pour a small amount of water into the bottom of the baking dish (about 1/4 cup) to help steam the peppers as they cook. Cover the dish with aluminum foil and bake for 25 minutes.

            Add Cheese & Finish Baking: Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese (if used) is bubbling and golden.

              Garnish: Remove from oven, let cool for a few minutes, then garnish with chopped cilantro or parsley. Serve warm with lime wedges on the side for an extra zing.
