Ingredients

4 large bell peppers (red, yellow, or orange)

1 cup cream cheese, softened

1/2 cup Greek yogurt

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 cup assorted fresh fruits (strawberries, blueberries, kiwi, banana, pineapple - diced)

1/2 cup granola (for topping)

Mint leaves (for garnish)

Optional: crushed nuts or seeds for added crunch

Instructions

Prepare the Peppers: Preheat your oven to 375°F (190°C). Carefully slice the tops off the bell peppers and remove the seeds and membranes. Place them cut-side up in a baking dish.

Mix the Filling: In a medium-sized bowl, combine the softened cream cheese, Greek yogurt, honey (or maple syrup), and vanilla extract. Mix until it’s smooth and creamy. Adjust sweetness to your taste.

Add the Fruits: Gently fold the diced fruits into the cream cheese mixture, ensuring they are evenly distributed throughout.

Fill the Peppers: Generously spoon the fruity cream cheese mixture into each bell pepper, packing it slightly to hold the filling firmly.

Bake the Peppers: Cover the baking dish with foil and bake in the preheated oven for about 20 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender and the filling is slightly set.

Add the Toppings: Remove the peppers from the oven and let them cool for a few minutes. Once cooled, top the stuffed peppers with a sprinkle of granola and any additional crushed nuts or seeds if desired.

Garnish and Serve: Garnish each stuffed pepper with fresh mint leaves for a pop of color and freshness. Serve warm or at room temperature as a delightful and colorful dish!
