Stuffed Mini Bell Peppers

12 mini bell peppers (assorted colors)

1 cup cream cheese, softened

1/2 cup shredded sharp cheddar cheese

1/2 cup feta cheese, crumbled

1/4 cup cooked bacon bits (optional)

1/2 cup fresh spinach, finely chopped

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare Peppers: Wash the mini bell peppers, cut them in half lengthwise, and remove the seeds and membranes.

      Make the Filling: In a large bowl, mix cream cheese, shredded cheddar cheese, feta cheese, bacon bits (if using), chopped spinach, minced garlic, onion powder, paprika, salt, and pepper until well combined. The mixture should be creamy and cheesy.

        Stuff the Peppers: Using a spoon or piping bag, fill each half of the mini bell peppers generously with the cheese mixture, making sure the filling is heaped slightly above the edges.
