Ingredients

20 large cremini or button mushrooms

8 oz (1 package) cream cheese, softened

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 tsp red pepper flakes (optional, for a kick)

Salt and pepper, to taste

1/4 cup breadcrumbs (optional, for extra crunch)

Olive oil, for drizzling

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Mushrooms: Clean the mushrooms with a damp cloth. Carefully remove the stems and chop them finely; set the caps aside and place them on a baking sheet.

Sauté the Stems: In a skillet over medium heat, add a drizzle of olive oil. Add the chopped mushroom stems and sauté for about 3-4 minutes until they are soft. Add minced garlic and sauté for an additional 1-2 minutes until fragrant. Remove from heat and let cool slightly.

Mix the Filling: In a mixing bowl, combine the softened cream cheese, sautéed mushroom stems, shredded mozzarella, grated Parmesan, chopped parsley, and red pepper flakes (if using). Season with salt and pepper to taste. Mix until everything is well combined and creamy.

Stuff the Caps: Using a small spoon or a piping bag, generously fill each mushroom cap with the cream cheese mixture, packing it slightly to ensure they hold their shape.

Add Breadcrumbs (Optional): If you like a crunchy topping, sprinkle a little bit of breadcrumbs over each stuffed mushroom for texture.

Drizzle with Olive Oil: Lightly drizzle olive oil over the stuffed mushrooms for added flavor and moisture.

Bake: Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.

Serve: Remove from the oven and let them cool for a few minutes. Garnish with additional fresh parsley, if desired. Serve warm as an appetizer or a delightful side dish.
