Ingredients

1 lb (450g) ground beef

8 oz (225g) egg noodles or ramen noodles

2 tablespoons vegetable oil

4 green onions, chopped (white and green parts separated)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce

1/4 cup hoisin sauce

2 tablespoons brown sugar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (optional, for spice)

1 cup bell peppers (red, green, or yellow), sliced

1 cup snap peas or sugar snap peas

Sesame seeds, for garnish

Instructions

Cook the Noodles: Begin by cooking the egg noodles or ramen noodles according to package instructions. Once cooked, drain and set aside.

Sauté the Aromatics: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the white parts of the chopped green onions, minced garlic, and minced ginger. Sauté for about 1-2 minutes until fragrant.

Brown the Beef: Add the ground beef to the skillet. Cook until browned and cooked through, breaking it up into small pieces as it cooks. This should take about 5-7 minutes.

Incorporate the Vegetables: Add the sliced bell peppers and snap peas to the skillet. Stir-fry for an additional 3-5 minutes until the vegetables are tender yet still crisp.

Make the Sauce: In a separate bowl, mix together the soy sauce, hoisin sauce, brown sugar, sesame oil, and red pepper flakes (if using). Pour this sauce over the beef and vegetables in the skillet. Stir to combine and let it simmer for 2-3 minutes, allowing the flavors to meld.

Combine with Noodles: Add the cooked noodles to the skillet and toss everything together until well combined and heated through, about 2 minutes.

Serve: Remove from heat, garnish with the green parts of the chopped green onions and sesame seeds. Serve hot, and enjoy your Mongolian Beef Noodle Bliss!
