Ingredients

1 large store-bought or homemade flatbread (whole wheat or gluten-free)

1 cup of hummus (your choice of flavor)

1 medium zucchini, thinly sliced

1 medium yellow bell pepper, thinly sliced

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1/2 cup crumbled feta cheese (optional)

1/4 cup kalamata olives, pitted and sliced

1 tablespoon olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Flatbread: Place the flatbread directly on a baking sheet or pizza stone. Brush a light layer of olive oil onto the flatbread to keep it moist and add flavor.

Spread Hummus: Evenly spread the hummus across the flatbread, leaving a little border around the edges for a crust.

Add Veggies: Layer the thinly sliced zucchini, yellow bell pepper, cherry tomatoes, and fresh spinach on top of the hummus.

Season the Veggies: Sprinkle dried oregano, salt, and pepper over the veggies. If using, scatter crumbled feta cheese and sliced kalamata olives on top for extra flavor.

Bake: Place the flatbread in the preheated oven and bake for 12-15 minutes, or until the veggies are tender and the edges of the flatbread are golden and crispy.

Garnish: Remove the flatbread from the oven and let it cool for a couple of minutes. Garnish with fresh basil leaves before slicing.

Serve: Cut the flatbread into slices or wedges and serve warm. Enjoy the burst of summer flavors and healthy goodness!
