1 lb large shrimp, peeled and deveined

2 tbsp olive oil

2 garlic cloves, minced

Juice of 1 lime

1 tsp chili powder

1/2 tsp smoked paprika

Salt and pepper, to taste

4 large whole wheat or spinach tortillas

1 cup mixed greens (arugula, spinach, or baby kale)

1/2 cup cherry tomatoes, halved

1/2 avocado, sliced

1/4 cup crumbled feta cheese

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the olive oil, minced garlic, lime juice, chili powder, smoked paprika, salt, and pepper. Add the shrimp and gently toss to coat. Let marinate for 15-20 minutes for maximum flavor.

    Preheat the Grill: Prepare your grill for medium-high heat. If using a grill pan, preheat it over medium-high heat as well.

      Grill the Shrimp: Once the grill is hot, skewer the marinated shrimp or place them directly on the grill. Grill for 2-3 minutes on each side, or until they turn pink and opaque. Remove from the grill and let them rest for a minute.

        Assemble the Wrap: Lay a tortilla flat and place a handful of mixed greens in the center. Top with grilled shrimp, halved cherry tomatoes, slices of avocado, and a sprinkle of feta cheese.

          Wrap it Up: Fold the sides of the tortilla over the filling and roll it up tightly from the bottom to the top. Repeat with the remaining tortillas.
