Ingredients
  

For the Chicken Marinade:

1 lb boneless, skinless chicken breast, cut into bite-sized pieces

2 tbsp soy sauce

1 tbsp rice vinegar

1 tsp cornstarch

1/2 tsp black pepper

For the Sauce:

1/2 cup pineapple juice

1/4 cup rice vinegar

1/3 cup brown sugar

2 tbsp ketchup

1 tbsp soy sauce

1 tbsp cornstarch mixed with 2 tbsp water (slurry for thickening)

For the Stir-Fry:

1 red bell pepper, diced

1 green bell pepper, diced

1 medium onion, chopped

1 cup pineapple chunks (fresh or canned)

2 tbsp vegetable oil

1 clove garlic, minced

1/2 tsp crushed red pepper flakes (optional)

Sesame seeds for garnish

Cooked rice, for serving

Instructions
 

Marinate the Chicken:

    In a mixing bowl, combine chicken pieces with soy sauce, rice vinegar, cornstarch, and black pepper. Mix well and let it marinate for at least 30 minutes at room temperature (or up to 2 hours in the fridge).

      Prepare the Sauce:

        In a small saucepan, whisk together pineapple juice, rice vinegar, brown sugar, ketchup, soy sauce, and the corn starch slurry. Heat over medium heat until it starts to simmer. Stir constantly until the sauce thickens, about 3-4 minutes. Remove from heat and set aside.

          Stir-Fry the Vegetables:

            In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and fry for about 30 seconds until fragrant.

              Cook the Chicken:

                Add the marinated chicken to the skillet. Cook for about 5-7 minutes, stirring frequently, until the chicken is browned and cooked through. Ensure there are no pink spots remaining.

                  Add Vegetables and Pineapple:

                    Stir in the diced bell peppers, onion, pineapple chunks, and crushed red pepper flakes (if using). Stir-fry for another 4-5 minutes until the vegetables are tender-crisp.

                      Combine with Sauce:

                        Pour the thickened sweet and sour sauce over the chicken and vegetable mixture. Stir well to coat everything in the sauce and allow it to heat through for an additional 2-3 minutes.

                          Serve:

                            Spoon the sweet and sour chicken over cooked rice. Garnish with sesame seeds if desired, and enjoy your dish served hot!
