1 cup rolled oats

1 cup grated carrots (about 2 medium carrots)

½ cup nut butter (almond or cashew work well)

½ cup medjool dates, pitted and chopped

¼ cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon cinnamon

¼ teaspoon nutmeg

¼ teaspoon ginger powder

¼ cup shredded coconut (optional)

¼ cup chopped walnuts or pecans (optional)

Pinch of salt

Prepare Ingredients: Begin by washing and grating the carrots. If using medjool dates, soak them in warm water for about 10 minutes to soften if they are a bit dry, then drain and chop.

    Mix the Base: In a large mixing bowl, combine the rolled oats, grated carrots, nut butter, chopped medjool dates, honey (or maple syrup), vanilla extract, and salt.
