1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons vegetable oil

1 bell pepper (any color), sliced into strips

1 cup snap peas, trimmed

1 cup broccoli florets

2 cloves garlic, minced

1-inch piece of ginger, minced or grated

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Salt and pepper to taste

Cooked jasmine rice or noodles, for serving

Chopped green onions and sesame seeds for garnish

Instructions
 

Prepare the Chicken: Season the chicken strips with salt and pepper. Set aside.

    Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.

      Cook the Chicken: Add the chicken strips to the hot oil. Stir-fry for about 5-7 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add the minced garlic and ginger and sauté for about 30 seconds until fragrant. Then, add the bell pepper, snap peas, and broccoli florets. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

          Combine and Sauce: Return the cooked chicken to the skillet with the vegetables. Pour in the sweet chili sauce, soy sauce, and rice vinegar. Stir everything together to coat the chicken and vegetables evenly.

            Thicken the Sauce (Optional): If you prefer a thicker sauce, add the cornstarch mixture into the skillet, stirring continuously until the sauce thickens, about 1-2 minutes.

              Serve: Serve the stir fry over cooked jasmine rice or noodles. Garnish with chopped green onions and sesame seeds.
