1 cup Medjool dates, pitted

1 cup walnuts (or almonds), lightly toasted

1/2 cup unsweetened cocoa powder

1/4 cup almond butter (or any nut butter of your choice)

1 tsp vanilla extract

1/4 tsp sea salt

1/4 cup shredded coconut (for rolling)

1/4 cup chocolate chips, melted (optional for coating)

Instructions
 

Begin by placing the pitted Medjool dates in a food processor. Pulse until they form a sticky paste.

    Add the toasted nuts to the food processor and blend until they are finely ground and fully incorporated with the date paste.

      Next, add the unsweetened cocoa powder, almond butter, vanilla extract, and sea salt to the mixture. Blend again until everything is well combined and forms a thick, sticky dough.

        Using your hands, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls.

          Roll each truffle in shredded coconut for a beautiful finish, or, if you prefer a chocolate coating, dip them in melted chocolate chips and let them firm up on parchment paper.

            Place the finished truffles in the refrigerator for at least 30 minutes to firm them up before serving.
