Ingredients

3 medium-sized apples (such as Honeycrisp or Fuji)

1 cup rolled oats

1/2 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 cup chopped walnuts or pecans (optional)

2 tablespoons unsalted butter, melted

1 tablespoon lemon juice

Puffed pastry sheets (2 sheets for a more flaky texture, optional)

Powdered sugar (for dusting)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Prepare the Apples: Core and dice the apples into small bite-sized pieces. In a large bowl, toss the diced apples with lemon juice, brown sugar, cinnamon, nutmeg, and chopped nuts if using. Allow the mixture to sit for about 10 minutes to let the flavors meld.

Make the Oat Topping: In another bowl, combine the rolled oats, melted butter, brown sugar, and spices. Mix until the oats are evenly coated.

Assemble the Bites: If using puffed pastry, roll it out slightly on a floured surface and cut it into squares (about 3x3 inches). Place a spoonful of the apple mixture in the center of each square, followed by a spoonful of the oat topping. Fold the edges of the pastry over the filling.

Bake the Bites: Arrange the sweet apple bites on the prepared baking sheet or, if you are not using pastry, simply place the apple mixture in small baking dishes. Bake for 25-30 minutes or until the apples are tender and the topping is golden brown.

Serve: Allow the bites to cool for a few minutes before dusting them with powdered sugar. Serve warm as a delightful snack or dessert.
