Ingredients

2 cups unsweetened shredded coconut

1 cup plain Greek yogurt (or dairy-free alternative)

3 tablespoons honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/2 cup dark chocolate chips (optional)

Fresh fruit (such as berries or mango) for topping (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy removal of the clusters.

Mix Coconut Base: In a medium bowl, combine the shredded coconut, Greek yogurt, honey (or maple syrup), vanilla extract, and sea salt. Mix until well incorporated and ensure the coconut is evenly coated.

Shape clusters: Using a tablespoon or an ice cream scoop, scoop portions of the coconut mixture onto the prepared baking sheet. Gently shape them into clusters about 2-3 inches in diameter, leaving space between each cluster.

Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the edges turn golden brown. Watch closely to avoid over-baking, as coconut can burn easily.

Cool Completely: Once baked, remove the clusters from the oven and allow them to cool on the baking sheet for about 10 minutes. Then, transfer them to a cooling rack and let them cool completely.

(Optional) Chocolate Drizzle: If you'd like to add chocolate, melt the dark chocolate chips in a microwave-safe bowl in 30-second increments, stirring until smooth. Drizzle the melted chocolate over the cooled clusters.

Serve: These sweet coconut yogurt clusters can be enjoyed as a snack or breakfast. Top with fresh fruit if desired for an extra burst of flavor and nutrition.

Store: Keep any leftover clusters in an airtight container at room temperature for up to one week or refrigerate for longer freshness.
