Ingredients

2 cups fresh sweet corn kernels (about 3-4 ears of corn)

1/2 cup all-purpose flour

1/2 cup cornmeal

1/4 cup finely chopped fresh chives

2 large eggs

1/2 cup milk

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika (optional)

1 tablespoon olive oil (for cooking)

Sour cream or Greek yogurt (for serving)

Extra chives for garnish (optional)

Instructions

Prepare the Corn: If using fresh corn, carefully cut the kernels off the cob and place them in a large mixing bowl. If using frozen corn, ensure it’s thawed and drained well.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, cornmeal, baking powder, baking soda, salt, pepper, and smoked paprika until well combined.

Combine Wet Ingredients: In another bowl, beat the eggs and then add in the milk, mixing until fully blended.

Combine All Ingredients: Pour the wet mixture into the bowl with the dry ingredients. Stir gently until just combined (don’t overmix). Fold in the sweet corn and chopped chives until evenly distributed.

Heat the Pan: Heat a non-stick skillet over medium heat and add olive oil. Ensure the oil coats the bottom evenly.

Cook the Fritters: Using a 1/4 cup measuring cup, scoop the batter and drop it onto the hot skillet. Flatten slightly with the back of the scoop. Cook for about 3-4 minutes on each side or until golden brown and crispy. Remove from the skillet and keep warm while you cook the remaining batter.

Serve: Once all fritters are cooked, serve them warm with a dollop of sour cream or Greek yogurt on top. Sprinkle extra chives for garnish if desired.

Enjoy these delightful Sweet Corn and Chive Fritter Cakes as a snack, appetizer, or a light meal!
