4 cups fresh sweet corn kernels (about 6 ears of corn) or 3 cups frozen sweet corn

1 medium onion, diced

2 cloves garlic, minced

2 medium potatoes, diced (about 2 cups)

1 red bell pepper, diced

1 carrot, diced

4 cups vegetable broth

1 cup heavy cream or coconut milk for a dairy-free option

2 tablespoons olive oil or unsalted butter

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Optional: A squeeze of lime for brightness

Sauté the Veggies: In a large pot, heat the olive oil or butter over medium heat. Add the diced onion and red bell pepper, and sauté until the onion becomes translucent, about 5 minutes. Next, add the minced garlic and cook for another minute until fragrant.

    Add the Potatoes and Carrot: Stir in the diced potatoes and carrots, cooking for an additional 3-4 minutes while mixing well with the sautéed vegetables.
