1 ½ cups all-purpose flour

½ cup granulated sugar

2 tablespoons poppy seeds

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, melted and slightly cooled

2 large eggs

1 cup buttermilk (or plain yogurt mixed with a splash of milk)

Zest of 2 lemons

¼ cup fresh lemon juice

1 teaspoon vanilla extract

Optional: Glaze (1 cup powdered sugar mixed with 2-3 tablespoons of lemon juice)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with paper liners or grease with cooking spray.

    Combine Dry Ingredients: In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt until well combined.

      Mix Wet Ingredients: In another bowl, combine the melted butter, eggs, buttermilk, lemon zest, lemon juice, and vanilla extract. Whisk until the mixture is smooth and uniform.

        Combine Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients. Fold gently with a spatula until just combined; be careful not to overmix. The batter should be slightly lumpy.
