Ingredients

1 cup rolled oats

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup pure maple syrup

1/2 cup chopped walnuts

1/4 cup shredded unsweetened coconut

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

A pinch of salt

Optional: 1/4 cup mini chocolate chips or dried fruit for added sweetness

Instructions

Combine Ingredients: In a large mixing bowl, combine rolled oats, almond butter, maple syrup, chopped walnuts, shredded coconut, vanilla extract, ground cinnamon, and a pinch of salt. If desired, add mini chocolate chips or dried fruit for a sweet twist.

Mix Thoroughly: Use a sturdy spatula or your hands to mix all the ingredients together until well combined. The mixture should be sticky enough to hold together.

Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for about 30 minutes. This will make the mixture easier to form into bites.

Form Energy Bites: Once chilled, remove the mixture from the fridge. With your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is rolled into energy bites.

Store or Serve: Place the energy bites on a parchment-lined baking sheet or container. If you wish, you can chill them a bit more for firmness. Store in an airtight container in the fridge for up to one week, or freeze for up to a month.

Prep Time, Total Time, Servings: 15 minutes | 45 minutes (including chill time) | Makes about 16-20 energy bites.
