Sweet Potato and Black Bean Tacos

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

½ teaspoon garlic powder

Salt and pepper, to taste

8 small corn or flour tortillas

1 avocado, sliced

1 cup red cabbage, finely shredded

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C).

    Prepare sweet potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, cumin, smoked paprika, chili powder, garlic powder, salt, and pepper until well coated.

      Roast sweet potatoes: Spread the seasoned sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.

        Heat black beans: While the sweet potatoes are roasting, add the black beans to a small saucepan over medium heat. Season with a pinch of salt and cook for about 5 minutes until warmed through.

          Warm tortillas: In a dry skillet over medium heat, warm the tortillas for about 30 seconds on each side until pliable. You can also wrap them in a clean kitchen towel and microwave for about 30 seconds.

            Assemble tacos: Once the sweet potatoes are done roasting, remove them from the oven. To assemble the tacos, place a generous spoonful of roasted sweet potatoes on each tortilla, followed by the warmed black beans, sliced avocado, and shredded cabbage.
