2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, drained and rinsed

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

Salt & pepper to taste

8 small corn or flour tortillas

1 cup shredded red cabbage

1 avocado, diced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Optional: Salsa or hot sauce (for extra flavor)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Toss the diced sweet potatoes in a bowl with olive oil, cumin, smoked paprika, chili powder, salt, and pepper. Make sure they are evenly coated.

      Roast Sweet Potatoes: Spread the seasoned sweet potatoes on a baking sheet in a single layer. Roast in the preheated oven for about 25 minutes, or until tender and slightly caramelized, stirring halfway through.

        Heat Black Beans: While the sweet potatoes are roasting, heat the black beans in a small saucepan over medium heat until warmed through. Season with a little salt and pepper to taste.
