Sweet Potato and Kale Gratin

3 large sweet potatoes, thinly sliced

4 cups fresh kale, stems removed and chopped

1 cup heavy cream

1 cup shredded Gruyère cheese

1 cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

1/2 teaspoon nutmeg

1 cup panko breadcrumbs for topping

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Kale: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped kale, salt, and pepper, and cook, stirring occasionally, until the kale is wilted and tender, about 5-7 minutes. Remove from heat and set aside.

      Combine Cream Mixture: In a mixing bowl, whisk together the heavy cream, thyme, nutmeg, and another pinch of salt and pepper. Stir in half of the Gruyère cheese.

        Layer the Gratin: In a greased 9x13 inch baking dish, layer half of the sweet potato slices at the bottom. Pour half of the cream mixture over the sweet potatoes. Spread half of the sautéed kale over the sweet potatoes. Repeat with the remaining sweet potatoes, cream mixture, and kale.

          Add Cheeses: Sprinkle the remaining Gruyère cheese and all of the grated Parmesan cheese on top of the final layer.

            Top with Breadcrumbs: In a small bowl, mix the panko breadcrumbs with a drizzle of olive oil until well coated. Evenly sprinkle the breadcrumb mixture over the top of the gratin.

              Bake: Cover the baking dish with foil (shiny side down) and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbly.

                Cool and Serve: Allow the gratin to cool for about 10 minutes before serving. Slice and enjoy this warm, comforting dish!
