1 ready-made pie crust (store-bought or homemade)

2 medium sweet potatoes, peeled and cubed

1 tablespoon olive oil

Salt and pepper, to taste

1 onion, finely chopped

3 cloves garlic, minced

4 cups fresh spinach

1 cup crumbled feta cheese

3 large eggs

1/2 cup heavy cream (or milk for a lighter version)

1 teaspoon dried thyme

1/2 teaspoon nutmeg (optional)

Zest of 1 lemon

Fresh parsley, for garnish

Instructions
 

Preheat the oven to 400°F (200°C). If using a homemade pie crust, prepare and place it in a tart pan. If using a store-bought one, fit it into the pan and blind bake it for 10 minutes. Remove and set aside.

    Prepare the sweet potatoes: In a pot of boiling salted water, cook the cubed sweet potatoes for about 10-12 minutes or until fork-tender. Drain and let cool.

      Sauté the aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and sauté for an additional 1 minute.

        Cook the spinach: Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Season with salt and pepper to taste. Remove from heat and let cool slightly.

          Create the filling: In a large bowl, combine the cooked sweet potatoes (lightly mashed), sautéed spinach mixture, crumbled feta cheese, eggs, heavy cream, thyme, nutmeg (if using), and lemon zest. Mix well until all ingredients are combined.

            Fill the tart: Pour the sweet potato filling into the prepared pie crust, spreading it evenly.

              Bake the tart: Transfer the tart to the oven and bake for 30-35 minutes or until the filling is set and the top is lightly golden.

                Cool and serve: Once done, remove from the oven and let it cool for about 10 minutes. Garnish with fresh parsley before slicing and serving.
