1 red bell pepper, diced

4 cups kale, stems removed and chopped

1 teaspoon smoked paprika

1/2 teaspoon salt (or to taste)

1/2 teaspoon black pepper (or to taste)

1/4 teaspoon crushed red pepper flakes (optional for heat)

4 large eggs (optional, for serving)

Fresh parsley, chopped (for garnish)

Prepare the Sweet Potatoes: In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and sauté for about 10-12 minutes, stirring occasionally, until they start to soften and develop a little color.
