Sweet Potato Shepherd’s Pie

2 large sweet potatoes, peeled and cubed

2 tablespoons unsalted butter

1/4 cup milk (or your choice of plant-based milk)

Salt and pepper, to taste

A pinch of nutmeg (optional)

For the Filling:

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 lb ground lamb (or beef for a different flavor)

1 cup carrots, diced

1 cup peas (fresh or frozen)

1 teaspoon dried thyme

1 teaspoon Worcestershire sauce

Salt and pepper, to taste

1 tablespoon tomato paste

1 cup vegetable broth

Instructions
 

Prepare the Sweet Potato Mash:

    - In a large pot, bring salted water to a boil. Add the sweet potato cubes and cook until tender, about 15-20 minutes. Drain and return to the pot.

      - Add butter, milk, salt, pepper, and nutmeg to the sweet potatoes. Mash until smooth and creamy. Set aside.

        Cook the Filling:

          - In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

            - Add ground lamb (or beef) to the skillet. Cook, breaking up the meat with a spoon, until browned, about 7-8 minutes. Drain any excess fat if necessary.

              - Stir in the carrots, peas, dried thyme, Worcestershire sauce, tomato paste, and vegetable broth. Season with salt and pepper to taste. Simmer for about 10 minutes or until the mixture thickens slightly.

                Assemble the Shepherd’s Pie:

                  - Preheat your oven to 400°F (200°C).

                    - In a greased baking dish, spread the meat filling evenly at the bottom. Top with the sweet potato mash, spreading it out to cover the filling completely. Use a fork to create decorative swirls on top if desired.

                      Bake:

                        - Bake in the preheated oven for 25-30 minutes or until the top is slightly golden and the filling is bubbling around the edges. Let it cool for a few minutes before serving.
