Sweet Soy Glazed Mahi Mahi

4 Mahi Mahi fillets (6 oz each)

1/4 cup soy sauce

1/4 cup honey

2 tablespoons rice vinegar

2 tablespoons sesame oil

3 cloves garlic, minced

1-inch piece of ginger, grated

1 tablespoon cornstarch (optional, for thickness)

2 tablespoons water (if using cornstarch)

Fresh scallions, sliced (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

Prepare the Marinade: In a bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until well combined. If you prefer a thicker glaze, dissolve cornstarch in 2 tablespoons of water and stir it into the marinade. Set aside.

    Marinate the Fish: Place the Mahi Mahi fillets in a shallow dish or a resealable plastic bag. Pour half of the marinade over the fillets, ensuring they are well-coated. Reserve the other half of the marinade for later. Cover the dish or seal the bag and let it marinate in the refrigerator for at least 30 minutes to 1 hour.

      Preheat the Grill or Oven: If grilling, preheat the grill to medium-high heat. For baking, preheat the oven to 400°F (200°C).

        Cook the Fish: For grilling, lightly oil the grill grates and grill the Mahi Mahi fillets for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork. For baking, place the marinated fillets on a baking sheet lined with parchment paper and bake for approximately 15-20 minutes, basting occasionally with the reserved marinade.

          Glaze the Fish: In the last 2-3 minutes of cooking, brush the fillets with the reserved marinade to create a beautiful glaze. If grilling, you can close the lid during this time to enhance the flavor.

            Serve: Once cooked, remove the Mahi Mahi from the grill or oven. Let it rest for a few minutes before serving. Top with sliced scallions and sprinkle with sesame seeds for a burst of flavor and texture.
