Sweet & Spicy Pineapple Chicken Kabobs

1 lb boneless, skinless chicken thighs, cut into 1-inch pieces

1 cup fresh pineapple, cut into 1-inch chunks

1 red bell pepper, cut into 1-inch squares

1 yellow bell pepper, cut into 1-inch squares

1 small red onion, cut into 1-inch chunks

¼ cup soy sauce

¼ cup honey

2 tablespoons sriracha or your favorite hot sauce

2 tablespoons lime juice

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon ground ginger

½ teaspoon black pepper

Salt to taste

Skewers (wooden or metal)

Instructions
 

Marinate the Chicken: In a large bowl, whisk together soy sauce, honey, sriracha, lime juice, olive oil, minced garlic, ground ginger, black pepper, and a sprinkle of salt. Add the chicken pieces to the marinade, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for extra flavor).

    Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. This step is not needed for metal skewers.

      Assemble the Kabobs: Remove the marinated chicken from the refrigerator. Thread the chicken, pineapple chunks, red and yellow bell peppers, and red onion onto the skewers, alternating the ingredients as desired.

        Preheat the Grill: Heat your grill to medium-high heat (about 400°F or 200°C). Lightly oil the grill grates to prevent sticking.

          Grill the Kabobs: Place the assembled kabobs on the grill. Cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C) and the vegetables have nice grill marks.

            Garnish and Serve: Remove kabobs from the grill and let them rest for a few minutes. If desired, drizzle with extra honey or sriracha for added flavor. Serve hot, garnished with lime wedges and fresh cilantro.
