1 cup fresh strawberries, hulled and sliced

2 tablespoons honey or maple syrup (to taste)

1 tablespoon lemon juice

1 cup chia seeds

4 cups almond milk (or milk of choice)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1 cup granola (your favorite kind)

Fresh mint leaves for garnish (optional)

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries, honey or maple syrup, and lemon juice. Stir gently and let it sit for about 10 minutes, allowing the strawberries to macerate and release their juices.

    Make the Chia Pudding: In a separate bowl, whisk together the chia seeds, almond milk, vanilla extract, and cinnamon until well combined. Let it sit for about 5 minutes, then whisk again to break up any clumps. Cover and refrigerate for at least 2 hours or overnight for a thicker pudding.
