Taco-Stuffed Bell Peppers

4 large bell peppers (any color)

1 lb ground beef (or ground turkey/chicken for a lighter option)

1 cup cooked rice (brown or white)

1 can (15 oz) black beans, drained and rinsed

1 cup corn (canned or frozen)

1 packet taco seasoning (about 1 oz)

1 cup salsa (plus extra for serving)

1 cup shredded cheese (cheddar or a blend)

1 teaspoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Sour cream for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Rinse the bell peppers and carefully slice the tops off, removing the seeds and membranes. Lightly brush the outside and inside of each pepper with olive oil and sprinkle with a little salt. Place them upright in a baking dish.

      Cook the Meat: In a large skillet over medium heat, add the ground beef (or turkey/chicken) and cook until browned, about 5-7 minutes. Use a spatula to break it up as it cooks.

        Mix the Filling: Once the meat is cooked, drain any excess fat. Stir in the cooked rice, black beans, corn, taco seasoning, salsa, garlic powder, onion powder, salt, and pepper. Combine thoroughly and let it simmer for about 2-3 minutes until heated through.

          Stuff the Peppers: Carefully spoon the taco mixture into each bell pepper, packing it down gently. Fill them generously to the top.

            Add Cheese: Sprinkle the shredded cheese on top of each stuffed pepper.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the peppers are tender and the cheese is bubbly and melted.

                Serve: Remove the taco-stuffed peppers from the oven and let them cool slightly. Garnish with fresh cilantro if desired. Serve with additional salsa and sour cream on the side.
