1 pound ground turkey (85% lean)

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon fresh thyme, finely chopped (or ½ teaspoon dried thyme)

¼ cup fresh parsley, finely chopped

1 teaspoon salt

½ teaspoon black pepper

1 tablespoon olive oil (for cooking)

Whole wheat or brioche burger buns

Lettuce leaves (for topping)

Tomato slices (for topping)

Avocado slices (for topping)

Prepare the Mixture: In a large mixing bowl, combine the ground turkey, lemon zest, lemon juice, Dijon mustard, minced garlic, dried oregano, fresh thyme, parsley, salt, and black pepper. Use your hands to mix until all ingredients are evenly incorporated, but do not overmix.

    Form the Patties: Divide the mixture into four equal portions and gently shape them into patties about ¾-inch thick. Make a small indentation in the center of each patty to help them cook evenly.

      Chill the Patties: Place the shaped patties on a plate, cover with plastic wrap, and refrigerate for at least 30 minutes. This helps the flavors meld and makes the patties easier to cook.
