3 cups cooked shredded chicken

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 small red onion, diced

2 cups shredded cheddar cheese

2 cups salsa (your choice of mild, medium, or spicy)

8 large flour tortillas

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro for garnish

Sour cream for serving (optional)

Avocado, sliced (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced red onion and bell pepper, sauté for about 3-5 minutes until they become soft and fragrant.

      Mix the Filling: In a large bowl, combine the shredded chicken, black beans, corn, sautéed vegetables, 1 cup of salsa, cumin, chili powder, salt, and pepper. Stir until everything is evenly coated and mixed.

        Prepare the Tortilla Stack:

          - Spread a thin layer of salsa (about ½ cup) on the bottom of a deep oven-safe dish or skillet.

            - Place one tortilla over the salsa. Spoon a generous portion of the chicken and bean mixture onto the tortilla and sprinkle with a handful of cheddar cheese.

              - Repeat this layering process (tortilla, filling, cheese) until all the ingredients are used, finishing with a final tortilla on top.

                Add Final Toppings: Cover the top tortilla with the remaining salsa and sprinkle the rest of the shredded cheddar cheese on top for a cheesy finish.

                  Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                    Garnish and Serve: Allow the stack to cool for a few minutes before slicing. Garnish with fresh cilantro and serve hot, accompanied by sour cream and avocado slices if desired.
