2 cups cooked chicken, shredded

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1/2 cup cooked black beans, drained and rinsed

1/2 cup corn kernels (fresh, frozen, or canned)

1/4 cup fresh cilantro, chopped

1 tablespoon taco seasoning

4 large flour tortillas

1/4 cup sour cream

1/4 cup salsa

2 tablespoons olive oil (for cooking)

Salt and pepper to taste

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, cheddar cheese, Monterey Jack cheese, black beans, corn, chopped cilantro, and taco seasoning. Season with salt and pepper to taste. Mix well until everything is evenly distributed.

    Assemble the Rollups: Lay out a tortilla on a clean surface. Place a generous amount of the chicken filling (about 1/2 cup) in the center of the tortilla, spreading it out longways. Roll the tortilla tightly, starting from one end and tucking in the sides as you roll, to create a secure roll. Repeat for the remaining tortillas.

      Cook the Rollups: Heat one tablespoon of olive oil in a large skillet over medium heat. Place the rollups seam-side down in the skillet (you may need to cook them in batches). Cook for 3-4 minutes per side, or until the rollups are golden brown and crispy. Add more oil as needed for subsequent batches.

        Slice and Serve: Once cooked, remove the rollups from the skillet and let them cool for a minute. Cut each rollup into bite-sized pieces or halves and arrange them on a serving platter.

          Make the Dipping Sauce: In a small bowl, mix the sour cream and salsa together. Adjust seasoning if necessary.
