4 cups ripe tomatoes, chopped

1 medium onion, finely diced

1 clove garlic, minced

1 cup vegetable broth

1 tablespoon Worcestershire sauce

1 tablespoon lemon juice

2 tablespoons gelatin powder (or agar-agar for a vegetarian option)

1 teaspoon sugar

Salt and pepper to taste

Fresh basil or parsley for garnish

Optional: sliced cucumbers, olives, or other garnishes

Prepare the Tomatoes: In a blender, puree the chopped tomatoes until smooth. Strain the puree through a sieve to remove seeds and skins, collecting the juice in a bowl.

    Sauté the Aromatics: In a pan over medium heat, add a splash of olive oil. Sauté the diced onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute, stirring frequently to avoid burning.

      Combine Ingredients: In a large saucepan, combine the strained tomato juice, sautéed onion and garlic, vegetable broth, Worcestershire sauce, lemon juice, sugar, salt, and pepper. Stir until well mixed and simmer for about 5 minutes to allow the flavors to meld.

        Bloom the Gelatin: In a small bowl, sprinkle the gelatin powder over 1/4 cup of cold water. Allow it to bloom for about 5 minutes, until it becomes spongy.

          Incorporate Gelatin: Once the tomato mixture is hot but not boiling, remove it from heat. Stir in the bloomed gelatin until fully dissolved. Taste and adjust seasoning if necessary.

            Mold the Aspic: Pour the mixture into a mold or individual serving cups. Allow it to cool slightly, then refrigerate until set, which usually takes about 4-6 hours or overnight for best results.

              Serve: Once set, carefully unmold the aspic onto a plate by gently running warm water over the outside of the mold for a few seconds. Garnish with fresh basil or parsley, and serve with optional sliced cucumbers or olives for added texture and flavor.
