Ingredients

1 French baguette, sliced into 1/2-inch thick slices

2 cups cherry tomatoes, halved

1/2 cup fresh basil leaves

1/4 cup balsamic glaze

1/4 cup extra virgin olive oil

Salt & pepper to taste

1/2 cup grated Parmesan cheese (optional)

Skewers (wooden or metal)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prep the Baguette: Arrange the baguette slices on a baking sheet in a single layer. Drizzle with olive oil and sprinkle with a pinch of salt. Bake for about 8-10 minutes, or until golden and crispy. Remove from the oven and set aside.

Assemble the Skewers: On each skewer, thread the following in order: a basil leaf, a half cherry tomato, another basil leaf, and another cherry tomato. Repeat this pattern until the skewer is filled, leaving a little space at each end for handling.

Grill or Broil (Optional): If you prefer a warm bruschetta, preheat your grill or broiler. Lightly grill or broil the skewers for about 2-3 minutes until tomatoes are slightly charred and fragrant. This step is optional but adds a lovely flavor!

Arrange & Drizzle: Place the toasted baguette slices on a serving platter. Arrange the skewers on top of or next to the slices. Drizzle balsamic glaze over the skewers and sprinkle with grated Parmesan cheese if using. Season with salt and pepper to taste.

Serve: Serve immediately as a delightful appetizer or party dish, and enjoy the fresh flavors!
