Tomato Basil Grilled Cheese

4 slices of sourdough bread

1 cup fresh mozzarella cheese, sliced

1 cup ripe tomatoes, thinly sliced

1/4 cup fresh basil leaves

4 tablespoons unsalted butter, softened

1 teaspoon balsamic vinegar

Salt and pepper to taste

Optional: A pinch of crushed red pepper flakes for heat

Instructions
 

Prepare the Ingredients: Gather all your ingredients, and have the butter softened and spreadable at room temperature. This will make it easier to apply on the bread.

    Assemble the Sandwich: On a clean work surface, lay out two slices of sourdough bread. Spread 1 tablespoon of softened butter on one side of each slice. This will be the outer side when grilling.

      Layer the Cheese and Tomatoes: On the unbuttered side of one slice, begin layering the fresh mozzarella, then add the tomato slices. Drizzle with balsamic vinegar, sprinkle with salt, pepper, and if desired, a pinch of crushed red pepper flakes for a bit of spice.

        Add the Basil: Gently stack the fresh basil leaves on top of the tomatoes for a burst of flavor.

          Top with Bread: Place the other slice of bread, buttered side facing up, on top of the layering.

            Grill the Sandwich: Preheat a skillet over medium heat. Once hot, carefully place the assembled sandwich onto the skillet. Cook until the bottom is golden brown, about 3-4 minutes.

              Flip and Cook Again: Using a spatula, flip the sandwich carefully to the other side. Cook for another 3-4 minutes or until the second side is golden and the cheese has melted.

                Serve: Once cooked, remove the sandwich from the skillet and let it cool for a minute. Slice it in half diagonally for presentation.

                  Enjoy: Serve warm with a side of tomato soup or a fresh green salad for a complete meal!
