8 oz spaghetti or your favorite pasta

2 medium zucchinis, spiralized (or sliced thinly)

2 cups cherry tomatoes, halved

3 cloves garlic, minced

1/4 cup olive oil

1 tsp red pepper flakes (adjust to taste)

1/2 cup fresh basil leaves, chopped

Salt and pepper, to taste

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to the package instructions. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

    Sauté the Garlic: In a large skillet, heat the olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

      Add Vegetables: Toss in the spiralized zucchini and halved cherry tomatoes. Season with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the zucchini is just tender and the tomatoes start to soften.

        Combine Pasta and Sauce: Add the cooked pasta to the skillet with the vegetables. Pour in a bit of the reserved pasta water to help create a sauce, stirring to combine.

          Finishing Touches: Remove from heat and mix in the fresh basil. Taste and adjust seasoning, adding more salt and pepper as needed.
