6 large flour tortillas

6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 cup diced cooked ham (or cooked bacon)

1 cup diced bell peppers (red, yellow, or green)

½ cup diced onion

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Tortillas: Lightly grease a 9x13 inch baking dish. Layer 3 tortillas on the bottom, overlapping them if needed to create a full base. Set aside the other 3 tortillas.

      Make the Egg Mixture: In a mixing bowl, whisk together the eggs and milk until well combined. Season with garlic powder, paprika, salt, and pepper. Mix well.

        Add Fillings: Stir in the shredded cheddar cheese, diced ham (or bacon), bell peppers, and onions into the egg mixture until evenly combined.

          Assemble the Bake: Pour half of the egg mixture over the laid-out tortillas. Top with the remaining tortillas, layering them on top to fully cover. Pour the remaining egg mixture over the top, making sure to evenly coat all tortillas.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the quiche is set and the top is golden brown.

              Cool and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro or parsley if desired. Cut into squares and serve warm.
