Instructions

Prepare the Crust:

    - Preheat the oven to 350°F (175°C).

      - In a bowl, mix together the graham cracker crumbs, melted butter, sugar, and salt until well combined.

        - Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish to create an even layer.

          - Bake for 8-10 minutes until lightly golden. Remove and cool completely.

            Make the Key Lime Filling:

              - In a large mixing bowl, whisk together key lime juice, sweetened condensed milk, sour cream, lime zest, egg yolks, and vanilla extract until smooth and creamy.

                - Pour the filling into the cooled graham cracker crust.

                  - Bake for an additional 10 minutes, then remove from the oven and allow it to cool at room temperature for 30 minutes.

                    - Refrigerate for at least 2 hours until fully set.

                      Prepare the Meringue:

                        - In a clean, dry mixing bowl, beat the egg whites with cream of tartar until soft peaks form.

                          - Gradually add sugar, continuing to beat until stiff peaks form and the mixture is glossy and smooth.

                            Assemble the Pie:

                              - Once the pie filling is set, spread the meringue over the top of the pie, making sure to seal the edges to prevent shrinking.

                                - Use a spatula to create swirls and peaks in the meringue for an elegant look.

                                  Bake the Meringue:

                                    - Preheat the oven to 350°F (175°C) again. Bake for 10-15 minutes or until the meringue is golden brown.

                                      - Keep a close eye on it to avoid over-browning.

                                        Make the Whipped Cream:

                                          - In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla until medium peaks form.

                                            Serve the Triple Decker:

                                              - Allow the pie to cool completely, then slice into wedges.

                                                - Top each piece with a dollop of whipped cream, and garnish with lime wedges and fresh mint leaves if desired.
