For the Fish:

1 lb white fish fillets (such as mahi-mahi or tilapia)

2 tablespoons olive oil

Juice of 1 lime

2 cloves garlic, minced

1 teaspoon chili powder

1/2 teaspoon cumin

Salt and pepper to taste

For the Tropical Salsa:

1 cup diced pineapple

1 ripe avocado, diced

1/2 small red onion, finely chopped

1/2 red bell pepper, diced

1 jalapeño, seeded and minced

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

Salt to taste

For Assembly:

8 small corn or flour tortillas

1 cup shredded red cabbage

Lime wedges for serving

Fresh avocado slices for garnish (optional)

Instructions
 

Marinate the Fish: In a bowl, whisk together olive oil, lime juice, minced garlic, chili powder, cumin, salt, and pepper. Add the fish fillets, coating them well. Let the fish marinate for at least 30 minutes.

    Prepare the Salsa: In a separate bowl, combine diced pineapple, avocado, red onion, red bell pepper, jalapeño, lime juice, cilantro, and salt. Toss gently to combine. Set aside to let flavors meld.

      Preheat the Grill: Preheat your grill or grill pan over medium-high heat.

        Grill the Fish: Remove the fish from the marinade and place on the grill. Grill for about 4-5 minutes per side or until the fish is cooked through and flakes easily with a fork. Remove from the grill and let rest for a couple of minutes before slicing into chunks.

          Warm the Tortillas: While the fish is resting, place the tortillas on the grill for about 30-60 seconds on each side until warm and pliable.

            Assemble the Tacos: Place a generous portion of shredded cabbage on each tortilla, add chunks of grilled fish, and top with the tropical salsa.

              Serve: Serve immediately with lime wedges on the side and optional avocado slices for garnish.
