Ingredients

2 cups cooked jasmine rice (preferably day-old)

1 cup fresh pineapple, diced (plus extra for garnishing)

1/2 cup red bell pepper, diced

1/2 cup green peas (fresh or frozen)

1/2 cup carrot, finely chopped

1/2 medium onion, finely chopped

2 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon fish sauce (or tamari for a vegetarian option)

1 teaspoon sesame oil

2 tablespoons vegetable oil (for cooking)

2 large eggs (beaten, optional for protein)

3 green onions, finely chopped (for garnish)

Fresh cilantro leaves (for garnish)

Lime wedges (for serving)

Salt and pepper to taste

Instructions

Prep the Rice: If using freshly cooked rice, spread it on a baking sheet to cool and dry out for about 30 minutes, as day-old rice works best for frying.

Sauté Aromatics: In a large wok or frying pan, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion and garlic, frying until softened and fragrant (about 2-3 minutes).

Add Vegetables: Stir in the carrots, red bell pepper, and green peas. Cook for another 3-4 minutes until the vegetables are tender but still vibrant.

Incorporate Pineapple: Add the diced pineapple to the pan and stir for 2 minutes, allowing it to caramelize slightly and infuse its sweetness into the vegetables.

Scramble the Eggs: Push the vegetable mixture to one side of the pan. If you're using eggs, pour the beaten eggs into the cleared space and scramble them until fully cooked. Mix them into the vegetables.

Combine with Rice: Add the cooked rice to the wok, breaking up any clumps. Pour in the soy sauce, fish sauce, and sesame oil. Stir everything well to coat the rice evenly; ensure it’s heated through (about 3-5 minutes). Season with salt and pepper to taste.

Finishing Touches: Stir in the chopped green onions, mixing well. Remove from heat.

Serve: Plate the Tropical Pineapple Fried Rice and garnish with additional pineapple chunks, fresh cilantro leaves, and a squeeze of lime juice. Serve with lime wedges on the side.
