12 oz penne pasta

1 lb ground turkey

8 oz cremini mushrooms, sliced

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup spinach, roughly chopped

1 can (14.5 oz) diced tomatoes (with juice)

1 cup heavy cream

1/2 cup grated Parmesan cheese, plus extra for serving

2 tbsp olive oil

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add chopped onions and garlic, cooking for about 3-4 minutes until the onions become translucent.

      Brown the Turkey: Push the onions and garlic to the side of the skillet. Add the ground turkey to the skillet, breaking it apart with a spatula. Season with salt, pepper, oregano, and basil. Cook until browned and cooked through, about 5-7 minutes.

        Add Mushrooms: Stir in the sliced cremini mushrooms and continue to cook for another 3-4 minutes until they are tender and the moisture has evaporated.

          Incorporate Tomatoes and Spinach: Add the diced tomatoes (with their juice) and chopped spinach. Stir to mix everything and simmer for about 5 minutes, allowing the flavors to meld together.

            Create the Cream Sauce: Reduce the heat to low and stir in the heavy cream. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.

              Combine Pasta and Sauce: Add the cooked penne pasta to the skillet, tossing to coat the pasta evenly with the sauce. If it appears dry, add a splash of pasta water or more cream.

                Add Cheese: Stir in the grated Parmesan and adjust seasoning with salt and pepper if needed. Cook for an additional minute until the cheese melts into the sauce.

                  Serve: Remove from heat, garnish with chopped parsley and additional Parmesan cheese if desired. Serve immediately for a hearty meal!
