Turkey Skewers with Peach Salsa

For the Turkey Skewers:

1 pound ground turkey

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

For the Peach Salsa:

2 ripe peaches, diced

1/4 medium red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup cilantro, chopped

Juice of 1 lime

Salt to taste

Prepare the Turkey Mixture: In a large bowl, combine ground turkey, breadcrumbs, grated Parmesan, minced garlic, parsley, onion powder, smoked paprika, salt, and black pepper. Mix until well combined.

    Form the Skewers: Divide the turkey mixture into 8 equal portions and mold them around soaked wooden skewers (or metal skewers) to form skewers of about 6-8 inches long. Make sure the turkey is evenly distributed.

      Preheat the Grill: Heat the grill over medium-high heat and brush the grates with olive oil to prevent sticking.

        Grill the Skewers: Place the turkey skewers on the grill and cook for about 10-12 minutes, rotating occasionally, until they are cooked through and have nice grill marks.

          Prepare the Peach Salsa: While the skewers are grilling, prepare the peach salsa by combining diced peaches, red onion, minced jalapeño, cilantro, lime juice, and salt in a bowl. Stir well and let it sit for a few minutes to allow the flavors to meld.

            Serve: Once the skewers are cooked to an internal temperature of 165°F (74°C), remove them from the grill. Serve hot with a generous topping of fresh peach salsa on the side.
