2 cups cooked chicken breast, shredded

1 cup plain Greek yogurt

1 medium cucumber, grated and excess moisture squeezed out

2 tablespoons fresh dill, finely chopped

1 tablespoon lemon juice

1 clove garlic, minced

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/4 cup Kalamata olives, pitted and sliced

4 cups mixed greens (like arugula or spinach)

Pita bread or pita chips, for serving

Instructions
 

In a large mixing bowl, combine the Greek yogurt, grated cucumber, fresh dill, lemon juice, minced garlic, salt, and pepper. Stir until well blended to create a creamy tzatziki sauce.

    In another bowl, add the shredded chicken and fold in half of the tzatziki sauce until the chicken is evenly coated. Save the remaining tzatziki for drizzling later.

      In a large serving bowl, place the mixed greens as a bed. Top with the tzatziki-coated chicken, halved cherry tomatoes, red onion slices, and Kalamata olives.

        Drizzle the extra tzatziki sauce over the top for added flavor.
