Ultimate Seafood Stuffed Shells

For the Stuffed Shells:

20 jumbo pasta shells

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup cooked shrimp, chopped

1 cup cooked crab meat

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 tablespoon lemon juice

Salt and pepper to taste

For the Sauce:

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 can (14 oz) diced tomatoes

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/4 cup fresh basil, chopped

For Topping:

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Fresh parsley for garnishing

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool.

    Prepare the Filling: In a large mixing bowl, combine the ricotta, mozzarella, Parmesan, chopped shrimp, crab meat, minced garlic, parsley, lemon juice, salt, and pepper. Mix until all ingredients are well combined.

      Make the Sauce: In a medium saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Stir in minced garlic and sauté for another minute until fragrant. Add the diced tomatoes (with juice), oregano, red pepper flakes, salt, and pepper. Let the sauce simmer for about 10 minutes, then stir in the fresh basil.

        Stuff the Shells: Preheat your oven to 350°F (175°C). Take a generous amount of the seafood filling and stuff each cooked jumbo shell. Place the stuffed shells in a baking dish.

          Assemble: Pour half of the tomato sauce over the stuffed shells. Then sprinkle half of the additional shredded mozzarella cheese over the top. Pour the remaining sauce over the shells and finish with the remaining mozzarella and Parmesan.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
